The wines of Melon de Bourgogne are spicy, with a salty, mineral touch and a hint of lemon. When aged on the yeast sediment, the wine becomes richer and rounder with beautiful umami aromas that go great with seafood and fish dishes, making it an ideal grape to use in sparkling/bubbly wines.
