Fitou was the Languedoc's very first AOC designation - it was first recognized in 1948 - and the long-standing production area of ​​Rivesaltes VDN, Fitou consists of two areas within the Corbières delineation, famous for its tradition of producing strictly dry red Languedoc wines. With its good aging potential, Fitou has the ability to mature into surprising wines with an almost liqueur-like structure, complemented by a generous nose of ripe, even dried figs, resinous garrigue and toasted chocolate notes.

The motto of Chevaliers de Fitou, the local Bacchic brotherhood dedicated to upholding the virtue of the region's wines, is Omnia fecti Deus, Fitou homines. This short epigram, which translates to "God made everything, but man made Fitou", articulates the savoir-faire and diversity in making red Fitou from two separate and different realms. Located along the coast, Fitou Maritime focuses on wines based on Syrah and Mourvèdre, while Fitou Haut, a few miles to the Wes, on a stretch of hilly slate, focuses on Grenache Noir at the expense of its old Carignan vines.
